How It All Started

Late nights in a converted Portland garage, the hum of our first small roaster filling the air with the rich aroma of transforming beans. What began as two friends chasing the perfect cup became a calling—to honor the farmers' labor while unlocking flavors most people never knew existed. Each experimental batch taught us something new: temperature curves, first crack timing, the delicate balance between caramelization and char.

Today, we travel thousands of miles to sit with the farmers who grow our coffee. We walk their land at sunrise, taste cherries fresh from the tree, and listen to stories passed down through generations. From the misty highlands of Yirgacheffe to the volcanic slopes of Antigua, these relationships are built on trust, transparency, and a shared commitment to quality over volume. Great coffee doesn't begin at the roastery—it begins on the farm. We source directly from cooperatives and family estates who share our values: environmental stewardship, fair compensation, and the pursuit of excellence. Every origin we select has been visited, every farmer relationship nurtured over years. We pay premiums that support education, infrastructure, and sustainable farming practices that protect both the land and future harvests.

Precision Roasting

Our vintage German Probat roaster is more than equipment—it's an instrument. Each origin demands its own approach: development time, airflow, temperature curves all carefully calibrated to coax out the beans' inherent character. We roast in small batches, never more than 25 pounds at a time, monitoring every stage from first crack to the moment we hear the beans sing. This is slow coffee, craft coffee, the kind that refuses to cut corners.
